What does a fast-flowing filter paper change in the cup?
A fast-flowing filter paper shortens the time that water and ground coffee stay in contact. At the same grind size, the cup turns out brighter and clearer, and fewer bitter compounds from the end of the brew make it into the coffee. At the same time, a fast paper allows a finer grind without the drawdown stalling. Repeatability matters as much as speed: if the drawdown time varies from brew to brew, so does the taste. Cone or Flat? And the right accessory
This is the cone version for the Graycano Dripper. If you prefer a flat coffee bed, the Sibarist Fast filter paper in Flat is made for the Graycano Coin.
