How do the Sibarist variants differ?
The three Sibarist filters for the Graycano differ in shape and paper. The Sibarist Fast Cone is a cone filter made from the fast-flowing Fast paper. A -2.75 degree angle adjustment aligns it with the Lava Ribs of the Graycano Dripper, and it reduces drawdown time variation from 7 to 3 seconds. The Sibarist Fast Flat uses the same Fast paper in a flat shape and is made for the flat coffee bed created by pairing the Graycano Dripper with the Graycano Coin. The Sibarist B3 Cone returns to the cone shape but uses Sibarist's B3 paper grade for a controlled flow and a clean, balanced cup. There are no drawdown measurements for it, but it comes in a pack of 100 filters. Sibarist makes all three in Barcelona from organic materials. The choice follows your brewing style: cone or flat decides the shape, Fast or B3 decides the paper.
