Our Promise

Coffee as a pause,
not as fuel.

We believe good coffee can be more than a quick grab across the counter. It deserves time: ground, brewed, smelled, and enjoyed with intention.

At the Graycano Brew Bar we create a moment between the everyday and the road ahead. With carefully selected coffees, honest craft, and tools that make the process visible.

Concept Café

Finally, a place to experience Graycano.

Since 2020 we’ve been designing coffee equipment for people who take coffee seriously. The cast-aluminum Dripper, the Cupcanos, the Pourcano. Our products now sit on kitchen tables and brew bars in over 30 countries. What was missing was a place where you could simply experience it all.

So we built one.

At the Brew Bar, everything is in real daily use. You drink from a Cupcano, your pour over runs through the Graycano Dripper. And where others do great work, we team up with brands we trust: a Slayer Steam at the espresso station, grinders by Mahlkönig.

We keep the same closeness with our coffee. We source our green beans directly from Noca in Brazil and have them roasted at Franz Morish. On top of that, guest roasteries rotate through the grinder, coffees we love drinking ourselves. And for pour over there’s our Frozen Menu with exclusive coffees from around the world.

Add snacks from Brazilian cuisine, Nicole’s home. Real food, real coffees, real tools. All in one place.

01 / TOOLS

Ours & the ones we trust

Filter coffee runs through the Graycano Dripper, served in Cupcanos. Alongside, we rely on equipment from brands we trust: a Slayer Steam at the espresso station and grinders by Mahlkönig.

02 / BEANS

Sourced directly, roasted with care

We source our green beans directly from Noca in Brazil and have them roasted at Franz Morish. Plus rotating guest roasteries in the grinder, and for pour over our Frozen Menu with exclusive coffees from around the world.

03 / FOOD

Snacks from Brazil

Coxinha, Pão de Queijo, Misto Quente. Small classics of Brazilian cuisine, just like Nicole knows them from home. Plus cakes and sweets from the counter.

The Location

A café inside
a car dealership.

Sounds odd. Maybe it is, a little. But the Brew Bar sits inside the BMW and MINI dealership on Zwickauer Straße, a place people pass through every day with a bit of time on their hands. Test drive, service, waiting time, coffee.

We’re Graycano, a coffee brand from Germany. Normally we design coffee equipment that’s in use in over 30 countries. With the Brew Bar, we turned that into a place: a real specialty coffee bar with high ceilings, calm light, and time for every cup. Whether you’re here for a car or simply for a really good coffee in Leipzig: you’re equally welcome.

An unusual place for a coffee. That’s exactly what makes it so good.

Pour Over · Filter Coffee

How we brew your filter coffee.

Pour over, our way: freshly ground, poured by hand, with time. Every cup is brewed in the Graycano Dripper, which we designed ourselves. And you can watch your coffee come to life. From grinding to the last drop.

Frozen Menu

Frozen at their peak.

Coffee loses aroma with every week after roasting. Freezing stops that process almost entirely: the volatile aromatics stay locked in, and the cold beans grind more evenly. The cup becomes clearer and more precise. That’s exactly why we freeze special beans in single portions, right at the point where they taste their best.

The Frozen Menu is where we serve coffees we’ve discovered on our journey through the coffee world. Special origins, rare varieties, and every now and then competition coffees that usually only judges get to taste. Some exist as a single tube. One brew, then it’s gone.

→ WHAT

Frozen in single portions

Selected beans, portioned and deep-frozen. Each tube is exactly one brew.

→ WHY

Freshness that stays

Freezing preserves the aromas and lets the beans grind more evenly. The result: cleaner, more precise cups.

→ WHAT’S INSIDE

Discoveries & competition coffees

Coffees from our journey through the coffee world. Some exist only once. Ask at the counter what’s in the freezer right now.

What Brazil brings to the table

Four little favorites.

Four things you won’t find anywhere else in Leipzig. Come by and try your way through.

Coxinha de Frango
→ Favorite snack

Coxinha de Frango

Teardrop-shaped, golden, soft inside. In Brazil you’ll find coxinhas on every corner, and everyone has their favorite version. Ours: tender chicken ragout, carefully seasoned, freshly fried.

If you’ve never had one: this is the snack people come back for.

Misto Quente
→ Lunch classic

Misto Quente

The warm heart of every Brazilian lanchonete: soft bread, melted cheese, with ham, chicken or salami. Sounds simple. Tastes like a São Paulo afternoon when you only meant to pop in and stayed three hours.

€ 7,90 · vegetarian as Queijo Quente € 6,20
Pão de Queijo
→ Brazil in one bite

Pão de Queijo

Little balls of cassava starch and cheese. Crispy outside, airy and chewy inside. In Minas Gerais, Nicole’s home, they belong to breakfast, to coffee, and to everything in between.

We bake them fresh. When the trays come out of the oven, you can smell it all the way to the counter.

vegetarian · gluten-free · € 1,40 (sold from the counter, not listed on the menu)
Matte Leão Iced Tea
→ Brazilian refreshment

Matte Leão Iced Tea

On Rio’s beaches, vendors walk through the sand calling “Mate! Mate!” Roasted mate tea is Brazil’s answer to a hot day: slightly sweet, herbal, ice-cold, with fresh lime.

Three sips in, you’ll understand why Brazilians can’t imagine summer without it.

From Minas Gerais, with love

Brazil on the plate.
And often in the cup.

Nicole, one of our co-founders, has her roots in Minas Gerais, one of Brazil’s great coffee regions. What she brought along in coffee and food culture, you can taste here every day: coxinhas, Pão de Queijo, brigadeiros, and Nescau in the cup.

And when our own beans are in the grinder, Brazil shows up twice. Our green coffee grows where Nicole comes from.

This menu is what we want to eat and drink ourselves. Small, warm, honest. And that’s exactly why it’s here.

Our Story

Brewing moments
that last a lifetime.

We don’t build tools. We build companions for people who appreciate the beauty of brewing. At Graycano we believe moments at the table last longer than products.

How it began

Graycano started in 2020 with a simple idea at a kitchen table in Northern Germany: to create a coffee experience that lasts.

Felix and Nicole were looking for a way to slow down in a fast world. A first sketch became the Graycano Dripper: cast aluminum, food-safe coating, fast preheating, stable temperature. Robust, durable, like nothing else out there.

More than just tools

Graycano isn’t about products, it’s about what happens around them. The moment you slow down. Five quiet morning minutes. The warmth of the cup in your hands. The aroma, the pour, the first sip.

With the Brew Bar we finally have a place that doesn’t describe this feeling, but delivers it.

The team behind the volcano

We’re a small team and we do everything ourselves. Building, designing, packing, coding, testing, testing again, answering every email. Felix leads product and design. Nicole brings strategy, sales, and her Brazilian energy. Frederik takes care of tech, logistics, and quality.

Two dry Northern Germans, one warm Brazilian. We haven’t planned everything out, but we’re truly in it. That takes you surprisingly far.

The farm in Brazil

Half a world away, in the hills of Minas Gerais, lies Fazenda Jacarezal, the heart of our My Tree project. Here, with farmer Paulo and his team, is where our coffee truly begins.

With My Tree you adopt a coffee tree, give it a name, and receive updates and photos. Not a marketing stunt. Personal, fair, with real jobs on site. And when your tree bears fruit, you get the beans.
