No coffee here is pushed across the counter in 20 seconds. Here it’s brewed — with the care it deserves and the time you’re allowed to give yourself.

Finally, a place to experience Graycano.

Since 2020 we’ve developed brewing tools for people who take coffee seriously — the cast aluminium dripper, the Cupcanos, the Pourcano. You’ll find our products in 30+ countries. But until now, there was no place to truly experience them.

We built that place.

Everything we make stands in daily use here — not in display cases. You drink from a Cupcano. Your pour-over runs through the Graycano Dripper. At the espresso machine we consciously use the best equipment that exists, even when it’s not from us. What matters is the coffee in the cup.

Same with the beans: much of it we select ourselves, direct trade, carefully cupped. The rest we bring in from partner roasters and Brewers Cup competitors — because they do something we want to celebrate. These special beans live in our Frozen Menu.

Plus Brazilian food from Minas Gerais, Nicole’s home state. Coxinhas, Pão de Queijo, Brigadeiros. Real food. Real coffees. Real tools. All in one place.

The Location

A café inside
a car dealership.

Sounds strange. Maybe it is, a little. But the Brew Bar sits inside the BMW and MINI dealership on Zwickauer Straße — a place where people pass through every day with time to spare. Test drive, service, waiting time, coffee.

Instead of a pod machine in the corner, we wanted something else. A real specialty coffee bar that stands on its own. High ceilings, quiet light, open view. Whether you’re here for a car or just for a really good coffee in Leipzig: you’re equally welcome.

It’s an unusual place for a coffee. That’s exactly what makes it so good.

How we brew your filter coffee.

Our filter coffee always runs through the Graycano Dripper — which we designed ourselves. Cast aluminium, food-safe silicone coating, a geometry that guides water through the coffee bed differently than anything else on the market.

What this means in the cup: a cleaner, sweeter, more balanced profile. What it means in the café: you can watch it being made while you drink.

Beans that normally end up in competitions.

Our Frozen Menu is a rotating selection of exceptional beans — many from partner roasters and Brewers Cup competitors. Flash-frozen right after roasting and portioned so every cup starts exactly where the roaster left off.

Freezing preserves the volatile aromatics that are normally lost in storage. The bean becomes more brittle, grinds finer and more evenly — and the cup becomes cleaner, more expressive, more precise.

Teardrop-shaped, golden-fried, soft inside. In Brazil you find Coxinhas at every bakery corner — and everyone has their favourite version. Ours has tender chicken ragout, carefully seasoned, freshly fried.

Misto Quente

The Brazilian “Misto” is the warm sibling of the sandwich: two slices of soft bread, melted cheese, ham, pan, butter, done. Ours features truffle ham — a small upgrade we treat ourselves to.

Sounds simple. Tastes like a São Paulo afternoon when you only meant to pop in and stayed three hours.

Pão de Queijo

Gluten-free little balls of cassava starch and cheese. Crispy outside, airy and elastic inside. In Minas Gerais — Nicole’s home — they’re part of breakfast, coffee, everything in between.

We bake fresh several times a day. When the trays come out of the oven, you can smell it all the way to the counter.

On every stretch of beach in Rio, a vendor walks through the sand with “Mate, Mate!” This roasted mate tea is Brazil’s answer to a hot day — slightly sweet, herbaceous, with lime.

We serve it ice-cold. Fresh lime slice on top. After three sips you’ll understand why Brazilians won’t have summer without it.

Nicole, one of our co-founders, has her roots in Minas Gerais. What she brought with her in terms of coffee culture and food culture, you taste at every table in the Brew Bar. We don’t build tools. We build companions for people who appreciate the beauty of brewing. At Graycano we believe moments at the table last longer than products.

Where it began

Graycano started in 2020 with a simple idea at a kitchen table in northern Germany: create a coffee experience that’s meant to last and that you truly enjoy. From a first sketch of a dripper grew a mission bigger than just brewing.

Felix and Nicole wanted to find a way to slow down in a fast world. The sketch became the Graycano Dripper: cast aluminium, food-safe silicone, rapid preheating, stable temperature, cleaner cup profiles. Robust. Durable. Like nothing else out there.

More than just tools

Graycano isn’t about products. It’s about what happens around them. The moment you slow down. Five quiet morning minutes. The warmth of the cup in your hands. The aroma, the pour, the first sip.

With the Brew Bar we finally have a place that doesn’t describe this feeling — it delivers it.

The team behind the volcano

We’re a small team — and we do everything ourselves. Build, design, pack, code, test, retest, answer every email. Felix leads product and design. Nicole brings strategy, sales, and her Brazilian energy. Frederik builds the tech, logistics, quality.

Two quiet northern Germans, one warm Brazilian. We don’t have it all figured out — but we genuinely care. That gets you surprisingly far.

The Farm in Brazil

Half a world away, in the hills of Minas Gerais, lies Fazenda Jacarezal — the heart of our sustainability project “My Tree”. Run by farmer Paulo and his team, this is where our coffee actually begins.

With My Tree you adopt a coffee tree, give it a name, receive updates and photos. No marketing stunt. Personal, fair, with jobs on site. And when your tree bears fruit: you get the beans.

We’re in the BMW and MINI dealership at Zwickauer Straße 55. Enter through the showroom — just walk in, past the cars, left to the bar. Parking right at the door. Tram 10 or 11 to Connewitz Kreuz, then five minutes on foot.
