Why does cup shape affect how coffee tastes?
Shape controls two things: how fast the coffee cools and how the aromas are carried to your nose. Cooling depends on the exposed surface. A wide, shallow cup gives off heat across a large area and cools noticeably faster, while a tall, narrow shape holds warmth longer. That is not a side issue, because coffee tastes different across its temperature range, and a fast drop cuts that range short. Then there is wall thickness and material: thin glass draws less heat out of the coffee as you pour than a thick-walled cup does. And an opening that tapers towards the top gathers the volatile aromas above the liquid instead of letting them escape sideways.
