SIBARIST X GRAYCANO: the special edition of the FAST filter

The idea of getting one step further and evolving even more the coffee brewing experience was born a couple of months before the World Brewers Cup 2022 in Melbourne, Australia. 

The combination of the graycano dripper and the FAST filter from Sibarist was already beloved and known to deliver amazing results to the cup. There was no doubt when Martin Wölfl, Austrian Brewers Cup Champion (2021 & 2022), chose this combination to accompany him and his marvelous coffee on the world’s stage.

Martin met Joaquim and Lambert at the World of Coffee in Milan and they directly got in contact with us to exchange thoughts, feedbacks, recipes and ideas on how the FAST filter and the graycano dripper were a match and actually how we can improve even more this successful association. 

After careful analysis and numerous prototypes, we all noticed how a little design change on the paper filter have a great impact on the extraction process. The amount of surface that touches the dripper wall affects the circulation of air and water, affecting the drawdown flow and time. The extra paper over the dripper does not only have a visual impact, but also prevents a closer pour of water for a more precise pour over.

Many tests and sharing of impressions, we finally found the perfect FAST filter specially designed to perfectly fit the graycano dripper. Martin was not only happy and approved the result, but also took this “old new” combination to Melbourne and again to the Austrian Brewers Cup 2022. 

Now we, graycano, have joined forces with SIBARIST and created this beautiful collaboration to bring this special edition of paper filter for the graycano dripper of the baristas from all over the world - allowing them to brew their coffee like never before.

The science behind the Graycano Special Edition Filter:

The graycano special edition is a redesigned SIBARIST CONE S FAST Specialty Coffee Filter. Its angle was adjust to fit the internal conical walls of the graycano dripper, which has a different angle as other conical drippers (for instance the V60).

A slight angle difference of -2,75º on the filter shape (once folded) allows the new filter to just perfectly lay over the graycano Lava Ribs. This avoids undesired and random filter positioning, like tilted sitting or uneven contact with the conical walls, which are the greatest reason to uneven extractions and consistency within a brewing recipe.

If the paper filter sits each time differently inside the graycano dripper, it disrupts these circulations by either detaining or boosting the flow of air and water. Meaning that a recipe can have a variation in the extraction results even if no factor was purposely changed. 

The precise fitting of the special edition filter inside the graycano dripper allows for a constancy on the coffee extraction process. By sitting just over the Lava Ribs, the air and water circulation between the filter and dripper is greatly improved in a sense of regularity.

In this case, the graycano Special Edition filter extracted in a slightly slower drawdown, but with a much thinner variation in time: 3 seconds. While the CONE S presented a 7 seconds difference between its drawdown times.

This is a result from the wider angle of the regular CONE S, which increases the air gaps in some parts depending on the placement of the filter. 

This time difference and dispersion might increase with a normal brewing conditions and different pours.

The graycano Special Edition filter is made out of the same material and unique structure of the FAST Specialty Coffee Filter giving the paper rigidness to maintain its conical structure over the Lava Ribs during the brew time. In addition, it assures for an faster flow in the extraction time of this combo.

Not less important is the adjusted height of the the new graycano Special Edition filter. There are no overpass to the dripper body, which now allows the barista to pour much closer to the coffee bed. Allowing for a more controlled and balanced flow of water during extraction. This is another fact that does not only improve the efficiency of your brew recipe, but also adds a more pleasant visual effect to the combo.
